Q: Does the ravioli seal as you are cutting the pastry?

Yes it will...if you prepare the dough correctly beforehand. In any situation, you may already know that you need to add a small amount of liquid around the filling, rubbing it on or using a pastry brush...then yes it will seal. I have had great success with this cutter!

Q: Can the cutter make wider noodles than spagetti or linguini

This pasta cutter is a free hand rolling cuter style, so you can cut the rolled out dough and width you want. But It's free hand so you have to be careful to get straight lines. There are rollers on Amazon that cut multiple lines at a time and are adjustable.

Q: Would the blade cut through a pastry mat? I use my granddaughter’s plastic play dough cutting wheel but would like to give it back to her.

I just compared to my pizza cutter and where the pizza cutter has a single bevel, this has a double bevel, more like a knife. My opinion it is 'sharper' than the pizza cutter - so not sure how tough the pastry mat is but you'd have to control the pressure of the cut so as to not cut a thin mat. Pull out your pizza cutter and give it a try - if you think that's too sharp, then this probably isn't for you!!!!

Q: Is the zigzag wheel sharp enough to cut rolled out raw sugar cookie dough (cut-out cookies dough) that's approx. 1/4"? Thank you.

It should be if it's rolled out that thin. But I don't know if the shape will hold up when you bake the cookie dough. It's a small zigzag.
