It's stronger than expandex so you use only 1/3 as much. I use it for gluten free bread baking and the recipe I have calls for 15 grams on expandex and I use 5 grams of this instead. **Q: Does this product COMPLETELY dissolve in water? What happens if I put it in hot water? Will it clump?** A: It's a cornstarch product , so if there is not enough water it could look clumpy . It seems to dissolve fine for me . It is extra strength , so less is needed .
