<p>1 package Eden Whole Shiitake Mushrooms . 1 package any Eden soba or Udon. 2 tsp Eden Wakame Flakes. 1/2 cup snow peas, stems removed. 1 cup carrots, julienne. 2 TBSP red onion, finely minced. 1/2 cup scallions, finely chopped. 1/4 cup water. 1 1/2 TBSP Eden Shoyu Sauce(or to taste). 2 TBSP fresh ginger root, finely grated.</p>

Soak Shiitake in warm water to cover for 20 minutes. Remove and discard stems. Slice the caps thin. Bring 2 quarts of water to a boil. Add the noodles and Shiitake. After returning to a boil, turn the flame to medium-low and simmer 9 minutes. Add the wakame and carrots. Cook another 1 or 2 minutes until the noodles are tender. Add snow peas the last few seconds. Pour into a colander, rinse under cold water, and drain. Place in a mixing bowl with the remaining vegetables. In a small bowl mix 1/4 cup water with shoyu and ginger. Pour over the noodles and vegetables. Toss to mix. Serve as is or chill.
