Q: what size is right for a king size muffin?

I think the large cookie scoop is right, it is #12 , 5.4 tbsp or 2.7 oz. Usually the medium cookie scoop is used for the standard muffins.

Q: The description says that the medium and small both hold 1.5 ounces. Is this correct? Shouldn't they be different?

The small cookie scoop can hold 1.5 Tbsp/ 0.8 OZ; and the medium cookie scoop can hold 2.8 Tbsp/ 1.4 OZ.. We will correct the description, thank you.

There is nothing on them showing where they were made.

Q: Are these (set of 3) stamped with the stainless steel grade 18/8?

No there is NO indication of 18/8 stainless steel is. The actual scoops were purchased in February, 2019. My husband makes a lot of homemade candy for church fund raisers and the set of scoops are doing great. The hand mechanism is sturdy and releases freely. They beat hand scooping. Also I hand wash the scoops. Hope this helps.
