I must admit I was skeptical. We've been using a low-carb pasta called carb nada and I do love it, but it's not really as low in carbs as I wish it would be. So when I saw this new product, I thought well the reviews are good. I guess I'll give them a try so today I decided to use the elbows to make my shrimp and pasta salad a family favorite. I cooked the pasta elbows as directed 15 minutes. I took a few out to sample them to make sure they were done and they were done to perfection and delicious all by themselves , so I continued and made my shrimp and pasta salad and you cannot tell that this is low-carb pasta. The cooking instructions were perfect and when they were done, they had just the right texture and bite. They were not chalky and no grit no aftertaste just tasted like pasta. I definitely will be ordering these and hopefully they'll be available in supermarkets but until then they'll be on my subscribe and save with Amazon. I did try the sample pack so I have the spaghetti to try yet and I believe the penne pasta which I'm sure will be fine. The price for the three boxes was 14.99 and it's a little expensive but I'm sure as time goes on the cost will go down as it gains popularity, it's not something we eat every day but to be able to enjoy a pasta dish and not feel so guilty about it. Well that's a treat. NOTE UPDATE: Reminder, there is lots of fiber in this product.

I was not expecting much—most low-carb pastas taste like disappointment with a side of cardboard. But this? This one shocked me. The texture is just a bit firmer than your usual pasta, like it could’ve used one more minute of boiling... but that’s where the complaints end. Flavor-wise? Spot-on. No weird aftertaste, no funky smell, just actual pasta. I dressed mine up with butter, garlic, and some homemade pesto, and it was so good I did a happy dance (yes, literally). If you're trying to cut carbs without cutting joy, this pasta might just be your new best friend.

THANK YOU, CARBE DIEM!!! Pasta is back on the menu for me even though I follow a low carb lifestyle!!! This is 100% the best low carb pasta I've ever tried and I've tried a lot over the years hoping for something that mimicked the real thing - while it's not exactly the same as traditional pasta, it's the closest you'll get in taste, texture, and shape!!! It cooked up so well (not mushy or grainy and it held its shape) and most importantly, it didn't spike my blood sugar. I just added it to my Amazon subscriptions so I'll never be out!!!

This pasta is good if you don't mind aldente', they never get soft. I recently tried the Asian style low carb noodles, and only found 1 of the ready made flavors to be good. The rest were all like rubber. I will be going back to these. This at least taste like pasta and doesn't feel like chewing rubber bands.

As a Type 2 diabetic who has to watch carbs and sugars, pasta was pretty much off limits. I've tried other so-called low carb pastas and they tasted really bad. But this? It is so good! I've made spaghetti with a meat sauce, turkey noodle soup with veggies and the penne, and can't wait to try the elbows. Definitely worth the cost.

I am very glad to have found this pasta. I am a fairly newly-diagnosed diabetic, so I've been working on balancing my love of bread and pasta with my need to not spike my sugar. Carbe diem is a welcome discovery. I ordered the three-pack and have so far tried the spaghetti and the penne. The spaghetti was a little chewy, but I think that's because I didn't cook it for quite long enough (make sure to read the directions--it takes more cooking time than regular spaghetti). The penne was perfect, and when I added a low-sugar spaghetti sauce, some meatballs, and fresh mushroom, it created a wonderful dish!--and I was thrilled to find that such a good meal did not spike my glucose level. The pasta is a bit expensive, but I will order it again. I'm very happy discover I can still have pasta after all.
