I do not see why not, you just cannot submerge the entire probe.

Q: How do you get the graph on the app to show the entire elapsed temps? It only shows the last 2-3 minutes.

You can just swipe the graph page to the right. Also you can zoom in or out, simply you can pinch with two fingers to zoom in or zoom out.
