Q: Do these arrive fresh?

Ordered 3 all had the same best use by date 3 months from arrival. So depending on how fast you can go through a barrel yeah. I'd have preferred that they have a longer use by date.

Q: How much in a gallon?

128 US fluid Ounces = 1 gallon The ounces in the container are dry ounces

Q: Are these supposed to be sealed under the cap? Mine came with no seal other than the screw on cap. Is this normal?

There is normally a clear like sealer that goes around the cap .
