Q: I've never ordered or done an adult paint by number, so I'm wondering, if you order framleless, does that mean the canvas doesn't lay perfectly flat?

I taped the canvas to a large piece of cardboard so it was perfectly flat.

Q: In the past when I painted the canvas was stretched over a frame before it is primed. How is the canvas suppose to be mounted?

You have to buy a frame and stretch it yourself plus staple it. The better idea is to only buy already framed. You also could take it to a craft store and pay to have it done.

You could probably paint it on a table top so long as you don't lean on the canvas. You'd probably want to work on it propped up if you're working toward the middle though.
