absolutely easy to follow recipes
Although I’m not in college , I would’ve enjoyed something like this to make for myself and to ensure I was eating healthy and not spending a lot of money. Those delivery pizzas end up costing a lot of money and a ton of calories! This offers variety and in some cases left overs for the next day.To me this is not just for the college student but anyone that once to follow simple recipes with ingredients you can find in the grocery store instead of hard to find and can barely pronounce ingredients. As I borrowed this from kindle unlimited, I’m going to order a copy for myself to use for future reference.I hate when you purchase a cookbook and only can use one or two recipes out of the entire book. But this is not the case here. I enjoyed numerous recipes that I will try out And with the nutrition counts it makes it simple to choose and pick which one you want to try for calorie, fat, or sugar counts.

Not What I Was Hoping For
I bought this because I’m just getting back into cooking and money is tight. This is extremely basic. When I say basic, I mean one recipe is hardboiled eggs (that’s it). One is a basic grilled cheese sandwich. One is corn on the cob (no other ingredients). There are some that are slightly more complex, but it’s nothing impressive honestly. If you really are a student and have no cooking experience, ok this might be the thing for you. But don’t be blown away by the number of recipes it has, bc again many of them are designed for someone who doesn’t know how to boil water (or use google).

Great gift for college students!
I bought this for my teenage daughter for Christmas, who is moving from a dorm without a kitchen to an on campus apartment soon. She has always been interested in going vegetarian, & doesn't know how to cook. I thought this was a great idea! It is cost conscious for a poor college student, healthy, & gives some basic cooking instructions. She hasn't tried any of it yet, but thumbed through it & told me that less than half of the recipes are vegan & more than half are vegetarian. I think she said it has over 200 recipes. This book was just the right price, & I combined it with some pots & pans that I bought elsewhere. I'll try to remember to come back & post an update after she tries cooking her first few meals.

What a great budget book!
If you are a vegetarian or vegan on a budget this book is perfect. It gives you a rounded out diet without breaking the bank. The recipes we have tried so far have been delish and I can't wait to try more. I noticed some compalints about the book before I bought it but let me assure you there are very few "strange" items used, it really is easy, and most can be done in under 20 minutes!!!!!!!

Good satisfying meals that are affordable and with reasonable preparation time, effort, and cost.
Portabello and bell-pepper fajitas, spinach and feta pie, black bean and butternut squash chili: these are just a few of the fantastic recipes in this cookbook. I purchased this book after watching Forks Over Knives while attending university. I still prepare these meals for my wife and myself years later. The recipes are great for the single and easily double for more. While I don't use all of the recipes in this book, I would heartily recommend it to everyone.

The meal choices aren't "boring" or "bland"
This was purchased as a gift for one of my children who has discovered vegetarianism is their first semester in college . They have expressed that they find the book to well organized and well written . My child says that the meals are varied and easy to prepare . The meal choices aren't "boring" or "bland" either which I will admit I would assume based on the $5 a meal title . The impression I got is that my little vegetarian is happy with this book .

This book is perfect for the student who is low on cash and on space to cook. I wish the book had photographs, but it does offer a wealth of recipes that are friendly to substitutions and embellishments. A more experienced cook may find this book to be boring but, if you are new to vegetarian cooking, or you are looking for some good foundation recipes, then this would be an excellent choice.

Amazingly useful, simple and delicious recipes
Straight forward, simple calculations. Few of the bells and whistles items that tend to increase your budget. Highly recommend this title.
