You get in the spring by carving the bark of two particular varieties of Maple: black maple (acer nigrum) and sugar maple (acer saccharum). The SAP obtained (contains just the 2% sugar), is concentrated in special containers called sugarshacks or cabanes à sucre, about 1/40 of its volume. Then follows a filtration before bottling, more or less deep, under which it is classified fancy (more refined), grade A, B or C (less refined).A maple produces on average 40 litres of juice per year, and to be able to produce, must have at least 80 years.From a nutritional point of view is a very genuine and rich in minerals: potassium, calcium (to an extent), iron and phosphorus (to a lesser extent).
