Q: What is the heat content rating?

What answer are you expecting? Scoville Units? I would say no more than 5,000 to 8,000. Which is about as hot as a jalapeno. But the flavor is so much better. I use this product multiple times per day...and do experience different levels of heat each time. The best part of the heat doesn't linger.

Q: How much to use in 1 lb of meat?

I worked in a hotel kitchen for twenty years so I would say what fells right. I is not a hot spice.

Q: Can this be used to season french fries?

Interesting question. Flavor wise, yes it will be spicy and delicious. This is a pretty coursely ground mix, so you might consider giving it a bit of a grind or contact me and I can do a custom grind for you. The other thing to consider is adding some salt as this mix is salt free. Hope this helps
