Q: Is this a real sourdough started with a live culture of lacto bacteria, or just sour because of the addition of ascorbic acid?

I’m not sure if the manufacturer started it from a culture, I just know I used it twice and it didn’t have the flavor of sourdough I make from my own starter. It wasn’t even close! I was very disappointed in this and would never buy it again.

No you cannot start a sourdough culture from this. It’s just to use to make one loaf.

Q: Can pancakes be made with this??

I've never heard of anybody making fermented pancakes. I was not satisfied with this product, so I wouldn't recommend it for anything.
