Q: Can I use this in diy beauty products?

Yes, you can. This is great for lotions and creams. I make my vegan butter using this, coconut oil, sea salt, nutritional yeast, apple cider vinegar and a bit of avocado oil! Great on toast. I am allergic to all dairy.

Upon the back of the label, it just mentions 100% Pure Sunflower Lecithin ingredients. It don't mention any nutrition values.

Q: Can you bake with this?

I use this when I make my vegan butter, so in my opinion you could bake with this.
