These are pretty small as far as depth

I use it in a residential freezer mostly and no problems. I feel like if u use in a commercial one it won't have to be in as long.

Q: How do I get the chocolates to release from the mold?

I stick them in the freezer for a few minutes and that usually helps. Also, make sure none of your fillings are touching the sides. That can be a problem. I also use tempered chocolates with my molds which seems to work better (plus the chocolates are more flavorful and crisp).
