Q: what size drill bit do you recommend using make the holes for using these?

5/32 (4mm) drill provides a nice snug fit. I still use RTV silicone around the inside of the lid to make sure no mold spores can get through the hole. Just a small amount is needed, and use a finger lightly dipped in soapy water to form the RTV so it isn't a mess.

Q: I'd be using these for mycology liquid culture. Are they better than foam for filtration?

They are more consistent in the particle size that is able to pass (0.22 micron). They cost more than foam/stuffing, but are easy to sterilize and are fairly simple to install.

Q: Can these go in a pressure cooker at 15psi?
