Q: Is there a wiring diagram available?

There is not, but there is only one location to plug this in, so pretty easy to use. I use these motors for my 3D printers (Creality CR-10's) and this motor can be used in any of the X, Y or Z slots with no problems.

Q: I wanna replace my old motor for a new one, I’m not sure if this is strong enough to move the z axis of my Ender 3.

Yes i personally fitted this and its fully functional. Plus you can add the adjstable pully fine for a stepper damper.
