Q: Would this be suitable for the headlining in a car?

It depends on how long you want to use it for....yes, it would work on headlining fabric, but this would only be a temporary solution. Stick and spray is a repositionable glue designed for quilters and sewers. It's really only meant to hold fabric together long enough to sew it in place - it's not a permanent solution and does lose it's stickiness after a while. I have used it on plastic, paper and acetate, so I know it does bond to other surfaces, however it's not designed for long-term use.

Q: What coverage does this give? How big of a quilt or how many quilts could I spray baste with one can?

I did a full size quilt with 1 can last year. My latest can I have been using on smaller projects and still have plenty left.I love it as it makes quilting so much easier.
