Q: Why this instead of a phone?

It would depend on what phone you have. Although the batteries in phones are improving all the time, there are more and more Apps draining the battery. Listening to music on the phone might not leave much battery power for phone calls or surfing. Music can take up quite a lot of memory on a phone. The Sony NW-A35 takes a micro SD card to increase memory capacity. The battery can last for several hours. However, the instructions only show charging via a computer. I assume that it's possible to charge from the mains, but haven't tried this. Compatible with car HiFi systems.

Q: I'm stuck, this or the Shanling M2s?

After some research I went for the Shanling M2s and very happy with the result. It's a replacement for my ageing iPod Classic with loads of connectivity and possibilities for hooking it up with other equipment, i.e. phone, bluetooth speakers, DACs, etc. Shanling have really nailed the affordable DAP with the M2s - move over FiiO and Sony!

Q: How is the volume of this Walkman. Is there a volume limiter and can it be totally disabled?

As it comes, the volume is ridiculously low. You have to turn the machine up full to drive a decent pair of headphones, and you need a decent pair to take advantage of the high sound quality. Nothing in the settings will allow you to remove the volume restriction, nothing at all. You would need to Google this problem in order to find a solution, which involves a bit of software and a small amount of computer knowledge. I don't know if I'm allowed to give the instructions here, so you should look for a site called Rockbox. I have altered my machine and now it works perfectly. I have it turned up to about 2/3 volume, and it sounds great.
