Q: It all sounds delightful, i was looking for non gmo flour, i did not see any info about that. is it organic or natural or non gmo?

I contacted my company representative about this. We are a US based importer of MDG. His answer was that the company will not make the claim that it is 100% non GMO, so they don't advertise it as such. The company Dallagiovanna has been in business almost 190 years, and purchase most of their grain in Northern Italy near the plant in Piacenza. Most of the grain grown there IS non GMO as many European growers adhere to that but it is not a requirement and as such they don't have any restrictions on it. He said realistically its probably between 90-99% non gmo varying between batches. If you look at their European or US website, you can view the plant and milling process, it is state of the art and they are the only miller to prewash the grain, so its some of the cleanest and purest flour around.
