Proprietary or not, if you see artificial flavoring and the manufacturer tells you the purpose of that ingredient is to imitate maple syrup, you know that artificial ingredient is some sort of synthetic analogue of fenugreek, which smells just like maple syrup. Every couple years as the wind shifts in early summer in New York City, there are articles penned about residents wondering what that maple syrup odor in the air is. Though the media plays like they don't know to milk a non-story for a couple days, it's because there's a big bakery in northern New Jersey right across the river that uses lots of fenugreek.
