I did keep it refrigerated because I did not use all of it in my recipe and we were at our cottage up north which did not have air conditioning.

I trim the skin off due to its toughness but if you like hard chewy you can leave it on.

Q: is this shipped refrigerated? I'm in LA.

It is shipped with a cold pack. Though it doesn’t really need to be.
