Yes, they are "starter" cartridges, so should be good for 500-600 pages. After, you will need to buy toner, and you can find ones that support 1000+ pages printed.

Q: Does it keep printing in black if one of the color cartridges is empty?

It's not ink cartridges, it's toner. What will happen is anything that needs that color will not have it. You can print in b/w by changing your printer settings to grayscale.. hope this helps!

Q: Can you disable ALL wireless functions: wifi, apple air print and the many others?

I don't know if there is a "disable" function, but if you don't give it a password to the wi-fi, I don't think it can use wi-fi, which of course Apple air print uses (and probably everything else uses). I am not aware of any wireless protocol to print with that it supports that is not over wi-fi. Just clear the password.

Q: Is there a USB cable included in the box?

No. There is only a power cable, no other cables included.
