Yes it can be used at 5:1 for floor mats. For heavily soiled mats GS diluted 5:1 would also be a good option

Yes, pol Star is safe for leather, alcantara and textiles.

I’ve used Pol Star on faux and vegan leather with success. I would start with a mild dilution and add if heavily soiled.
