Q: Will chickens overeat if they aren't given regular portions?

Chickens don't actually overeat. Unlike cats or dogs, they will just eat when they're hungry and won't eat more than necessary.

Q: Mine crumbles keep caking up from the humidity how can I combat this

I don't think they're really made for crumbles, humidity or not. Whole grains and pellets sometimes get jammed up, but poking with a long stick seems to clear the jam, or sometimes, just giving it a little shake. Also, I usually don't fill it more than ~ 25%, keeping the supply inside the house until the level in the feeder drops.

Q: Are these made from food-grade PVC?

The PVC pipe we use is made in Australia and used for normal water requirements in homes.

Q: Can this feeder be removed each night to prevent rodents crawling up the post or wire to which it's attached?

It would be easy to remove if needed. Attaching to a solid wall with the brackets provided is the best option if you have a rodent issue. Hanging the feeder as high as possible (neck height to your chickens) to make it as difficult as possible for the rodents to get up to, would also be helpful.
