Q: Will this cut other cheeses like colby-jack?

Yes. We use it to cut all kinds of cheeses. We also use it for bananas, soft pears, hard boiled eggs and quince cheese. Pretty much anything that can be easily sliced.

Q: Is it wide enough to cut spam?

I think it depends upon which way you are cutting the spam. If the slices are to be as wide as the long side, the slicer is slightly too narrow (3-1/4"), but you might be able to cut off a bit of the spam first. Otherwise for slices in the other direction it would work.

Q: Has anyone experienced broken wires? I will use for tofu

I have Not had any broken wires as of yet..
