Q: Can you use an extension cord with this?

The plug gets fairly hot. I would personally not recommend using an extension cord. The length of the cord included is lengthy.

Q: I have a terrible exhaust fan over my cooktop. If this was sitting on my countertop inches from a pot of boiling water, would it pull the steam?

I would not put the dehumdifier at this location.

Q: Will this automatically restart itself if there is a power outage and power is restored?

No, it does not. We had two power outages and I had to restart it manually both times.
