Q: Would this fit an iPad mini in the pelican case?

The Pelican case appears to be 0.71" in thickness with the tablet. The maximum thickness for the regular MyClip is 0.45". For your need we recommend the "Big Clip" which allows 0.95" thickness, inclusive of most any case on the market.https://www.amazon.com/gp/offer-listing/B00KLRO79C

Q: This versions hooks are much thicker than the 2019 version and blocking edge of iPad mini screen. Can I please get the previous version?

The standard MyClip and Big Clip were replaced by the current version in order to keep the cost down. That took place earlier in 2020. The prior design is no longer available.

Q: Will it work hands free with Siri

I have never tried this, but would suggest three cautions: 1. Does Sirii's vocabulary cover the words you may need in the cockpit particularly in a time critical emergency? 2. Will Sirii be able to handle the background noise of an aircraft particularly in flight. 3. Is the hardware behind your Siri system redundant, notice the people at Boeing recently found out the some of the problems of single stringiest electronic hardware with much sorrow. So great idea to try but suggest a lot of trial and checkout needed before you depend on it.
