Q: Why is there a California Proposition 65 Cancer warning on this?

I honestly wouldn't worry about it because California has ridiculously stringent laws about exposure to harmful chemicals. In this case, the warning is probably in regards to the packaging and not the product itself. The plastic used in the packaging MIGHT have very trace elements of a harmful chemical or metal but it is unlikely. You will find california prop. warnings on things like jackets or canned goods or even baby wipes for this same reason. (This warning is very frequently found on frozen fish or seafood, which is caused by the pollutants in the ocean that the fish could have possibly been exposed to before being processed.)

Q: Is there sodium in these caplets?

The bottle says each caplet contains calcium as calcium glycerophosphate and phosphorus as calcium glycerophosphate. Also contains magnesium stearate.

Q: My understanding of this product is that is works on the food, not on you. So would that mean it reduces acid in the food but not in your stomach?

Yes, take it before your going to eat food high in acidity. I was diagnosed with interstitial cystitis and coffee would put me in awful pain. Also tomato products. Since taking prelief I can now drink coffe and eat foods high in acidity. And have no bladder pain anymore.
