I’m a somewhat serious home cook and have been trying to replicate the mapo tofu (one of my favorite dishes) I get from a Sichuan restaurant. We order the Sichuan version (not the “Americanized” version). Using this doubanjian, I made my best mapo tofu ever! Really confirms that you have to use the right and authentic ingredients.PS I tried another brand before (also from Pixian province) but the taste and color were off.
