I would think Yes. Cake surface area is 14-1/4 inches. Dome is afull 4 inches high before sides start to decease

Q: Can this be placed in a freezer to store baked goods?

Only if your freezer is huge. The diameter of the bottom part of this product is almost 16". Good quality if you have the space!

Q: Can you also use this when collapsed to carry a shorter cake or will the act of carrying/lifting by the handle pop it up to full size?

It is kind of tough to get it to full size. I'm pretty sure you could put small cake in it. Also, this thing is HUGE!!! The pictures don't do it justice.
