I've written many reviews here on Amazon for meatpacking knives and accessories, based on my work in that industry for the past couple of decades. However, my start in the food industry came in produce departments of a supermarket chain. Cutting up fruits and vegetables for assorted trays. And this rather strange-looking squared knife by Dexter-Russell was the standard tool for such work. I enjoy cooking at home, and since I chop up many fruits and veggies, I decided to order one of these as a trip down memory-lane. And this knife was just as I remembered: SHARP! From soft broccoli to tough gourds, this will cut through just about any flora (now, on those gourds, you are still going to have to put some muscle into it, but it'll work). I find this knife much easier to use on produce than a repurposed meat knife, which oddly never seem quite as effective when needed to chop veggies. The straight, non-serrated edge makes this knife very easy to sharpen. The one downside of this knife is that, though the manufacturer claims the blade is stainless steel, I have witnessed knives from this manufacturer rust-- so I believe these knives use a lower grade of stainless steel. However, the sheer usefulness of this knife for the intended task, and its lightweight balance and feel, far outweigh this drawback. With washing and thoroughly-drying this knife immediately after use, the threat of rust should be averted for a number of years. As with any good knife, I do not recommend putting it in the dishwasher; wash and dry it (very carefully, remember it is sharp!) by hand. Despite this minor criticism, I cannot bring myself to lower its rating below five stars-- it is simply the best knife for cutting produce that I have ever used or owned, and I feel confident that your experience will be the same.

To be used less like peeling potatoes and more like scoring and slicing. Once you understand to score and slice its grand. The blade doesn’t flex much so one has to accept it’s not that kind of knife. The sheath is tight fitting so use both hands to pull it out and put it in. Well worth the buck

I have many7 expensive Japanese knives. ^his brand was recommended by a chef. I have now bought3 of this brand and wish I had known before spending all that money. they work better than the$$$$$$ knives.

This knife is a MUST HAVE! Very thin blade and it also curves easily to cut fruit! I bought this because this is the knife I use at work where I cut fruits and vegetables. Be careful though! This thang is sharp sharp!
