Q: Do you still need to weight your ferment? Website tips give suggestions for weighting, but if removing oxygen with pump is it needed?

Although a weight is not required we still recommend you use some sort of method to keep your veggies under the brine. Any veggies above the brine will not properly ferment. If the veggies are naturally submerged then there are no issues but it is better if you find a way to keep them under. During the early stages of the ferment the carbon produced will actually push the oxygen out of the Easy lid while the lid also ensures zero oxygen can enter. The pump is used more in the later stages of the ferment when you are opening the jar to test and there is little carbon being produced. Q: Can you make beer or wine in this?

As an experienced home brewer I would say yes and no. Cider yes, wine probably, beer not so much. The reason is that beer foams up a bunch during fermentation so you would have to leave a lot of "head space" or that foam (krausen) would spray out of the top, or clog the valve and explode the jar. IF you had a really large jar and only filled it 1/2 way or so you would probably be fine. But truthfully it's kind of a waste to deal with less that a couple of gallons of beer at a shot. Brewers might be able to use it for starters, but there are simpler alternatives.Cider doesn't foam much at all so it should work, and I don't believe wine foams a lot but am not sure. Mead would also probably work. Chemically there would be no problem. The one beer use that might make sense is for doing small batch sour beers. If you use this for the long term secondary there isn't a foaming issue.

I am currently fermenting a 1 quart mason jar of nothing but garlic cloves in a 5% brine. Tons of bubbles at day 4, no smell. I am quite pleased with it.
