Great umami flavor
This noodle soup base has much more depth and flavor than plain soy sauce. It's very versatile - I've used it as marinade, as a topping on top of raw vegetables, and as a soy sauce substitute in stir fry dishes.

Excellent Noodle soup base
I use it for Cold Somen noodles and Udon soup, also for Tempura sauce and Katsudon sauce ingredient, very good on cold Tofu with sesame oil, Sriracha, furikake, Bonito Shaving and green onions.

Great tasting hard to find soup base
Back in the early 1980's one of our twin sons had serious food allergies and our family went vegetarian. A local oriental grocery store owner introduced us to Kikkomen Memmi noodle soup base as a topping for Jasmin scented rice. She kept it on hand in her home for between meal snacks for her children. That was the beginning of our love affair with the wonderful flavor of Memmi. Biggest problem these days is finding it. Our go to Asian food market in Milwaukee only stocks it intermittently. When touring San Francisco a few years ago, we spent a couple hours walking around S.F.'s China Town and came up empty handed. Although it's very expensive buying it on-line we're delighted to be able to purchase Memmi by the half gallon from Amazon. Our grandson loves it and even prefers to enjoy it by drinking it mixed with hot water as a broth.

Great as a base, and not overwhelmingly salty when you follow the measurements on the side. It's also lasted me for ages. I expected to use it up quickly since it's merely 2 quarts (roughly 8 cups), though it's been in my fridge for a while now.
