Q: Are these good for earth bag building/construction?

Well I used them to sorta build up an area top fight run off erosion and that is working fine, the bag materal seem very strong fiber materal, I haven't done ant earth building but if I did, I would probably use just the same. If it holds sand, it will hold dirt

Q: How long will these last if stored out of the sun?

Mine have been outside, exposed to the sun and weather for the past two years. They are still in good shape.

Q: how much sand does one bag hold

I don't fill it up since I need to be able to lift and carry them, so I just fill it around 25 to 30 lbs only. But it could hold more I guess.

Q: Are they waterproof? Need something in case of flooding.

These would work to combat flooding. How they are stacked will affect their effectiveness more than whether these are "waterproof". I use these to mitigate overflowing from a pond during heavy rains. Water will not penetrate through the bag and sand, BUT will penetrate the seams between the bags. The ideal way to deal with this issue is to make your "wall" at least two rows deep (regardless of the height), offsetting the seams. This material does hold up well.
