Really good book to have, oy downsides are you have yo have an actual dehydrator and no instructions for oven drying. Other thing is everything is in US metrics. Other than that its a great addition to the shelf

Not quite what I was looking for
Written for the United States market I think

The most important part of any recipe book is missing.
Could be a good book but as there is no index it is very difficult to find suitable recipes. There is a tab.e of contents but this is not alphabetically arranged so I’d for example you wanted to find a recipe that used the dried produce you had created with the help of this book you have to read through every recipe heading which, let’s face it, you’re unlikely to do. What a waste of a book.

Written purely for American users
I am new to dehydrating food and was concerned about safety - like not giving myself food poisoning. I chose this book as I noted that the author was a food scientist and she does indeed give good guidelines for drying food safely that were not included in the instructions for the entry-level dehydrator that I have just purchased. My reason for docking two stars from what otherwise seems an excellent book is that it does not cater for a worldwide audience that uses degrees Celsius, grams and litres. How the USA is still using cups, pounds and ounces and degrees Fahrenheit is a mystery to me. I can recommend this book provided you equip yourself with conversion charts for Fahrenheit to Centigrade and pounds/ounces to grams - a set of 'cup' measures would probably be a good idea as well. I wish I had noticed that the rave reviews were from North America, before buying.

Fairly complete guide to start dehydrating. Well explained instructions and good pictures. The recipes are very nice to have and well written. As a dehydration novis this book helped me get started.
