What is the difference between this and other products that have erythitol like Swerve? I'm utterly confused.

This product has a new fermented sugarcane sweetener called Reb M, in addition to erythritol and soluble fiber, which provide volume and bulk. In my experience, this product performs better than plain erythritol in a number of applications- I’ve used it successfully in baked goods, custards, ice cream, and jam, with a taste that is nearly identical to sugar, and no detectable aftertaste or cooling sensation (like you’d get with plain erythritol). Swerve contains erythritol and fiber, but no Reb M. In my opinion the taste/ performance ranking goes like this: 1) Purecane, 2) Swerve, 3) erythritol. I use plain erythritol to everyday sweeten beverages and smoothies, but I choose the more expensive and better tasting products in desserts that I share with others (who can’t tell I’ve used a sugar substitute)!

I have to know the exact type of soluble fiber in the baking product for medical reasons (FYI: erythritol is a sugar alcohol, not a type of fiber).

Hello, this soluble fiber was chosen by design because it browns in baking and has a low glycemic index. It is plant based and has outstanding digestive tolerance. As with all medical concerns it is always best to consult with your physician if you have any worries before trying a particular product.

The "nutritional facts" label says that one 4-grams serving of purecane contains 4 grams of erythritol!  is purecane erythritol by another name?

The primary sweetener is Reb M. The erythritol is filler, which is itself 70% the sweetness of sugar and 6% the digestible carbs. Erythritol alone has some flavors some don't care for, possibly because for sugar-equivalent sweetness you have to use a good bit more. But when a sweeter component is added to bring it back to 1/1 sugar equivalency, usually Reb A or Reb M, this effect drops off to the point most people don't have a problem with it. PureCane uses Reb M (from sugarcane using a new fermentation technique), which is more expensive to produce than Reb A (from stevia), but it's not nearly as bitter as the more common Reb A.
By the way, many stevia sweeteners use dextrose as the filler. Yes, those are actually using sugar as the main ingredient in a sugar substitute.

What is the difference between the baking sugar and the sugar substitute packets? Can they be interchangeable?

Researching there is baking PureCane and there is sweetener PureCane.

The sweetener is used for coffees and teas. If you normally use 1 teaspoon of regular sugar to sweeten
your beverage, then you would use 1/3 teaspoon.

For the baking PureCane you substitute 1 for 1 regular sugar to PureCane.
