Is this a 12v demand pump?

Yes. It pumps up to its pressure (i believe it is 50psi) then shuts off until the demand is created again.

It is designed for use in campers as the water pump for the whole water system. The instructions include directions on sanitizing and winterizing. These instructions direct the use of non-toxic antifreeze for potable water systems. There is no mention of "food grade" in any of the materials supplied with the unit. I feel safe using it to pump potable water.

I'm installing 2 filters before the pump.Should I put the filters before or after the pump? I'm getting a lot of air at the faucets.
