Q: If mounted vertically on a wall, how much weight would it support ("in shear")?

This is a heavy duty unit and it will support your requirement

Q: Would this be appropriate to support a wooden disk (30 inch diameter x 1 inch thickness) spinning at 150 RPM? (i.e. a really fast lazy susan?)

I'm using the bearings to open something periodically. You will have to call the manufacturer to see if the bearings are rated for continuous operation and how many total revolutions the bearings can handle before they need to be replaced.

Q: Can this be used safely to hang something that is 1000lb?

it should effortlessly handle the weight on top compressing it , but not sure if it is designed to hang that much. seems to be a manufacturer question.
