The flavour packet does have MSG. Pretty much the second ingredient after salt. That being said, you can use/eat them without using the included flavour packet.

Q: Can you freeze or refrigerate them for longer storage?

Honestly, I don't think it's necessary. I have found some in my pantry from almost two years out and they are just perfect tasting.

Q: How much sodium is in them?

1700 mg, but it's in a separate foil packet so you can put in as much or as little as you'd like. I'll use half the packet to flavor the noodles -we don't drink the broth, so for more flavor I could lower the water, but usually don't need to do this - & it tastes fine.
