Q: It's ridiculous not to list the ingredients. Does it have xanthan gum?

Ingredients: Brown Rice Flour, Tapioca Starch, White Rice Flour, Potato Starch, Songhum Flour, Arrowroot Starch, Sweet Rice Flour, Guar Gum. I believe it would help to add 1/4 tsp xanthan gum per 1 cup of Artisan Flour for certain recipes.

This is from Pamela's site in regards to the Artisan flour blend : Ingredients: Brown Rice Flour, Tapioca Starch, White Rice Flour, Potato Starch, Sorghum Flour, Arrowroot Starch, Guar Gum, Sweet Rice Flour, Rice Bran.Allergens: None. Yes. After months and months of trying different gluten free flours I have found this product to yield excellent results; I would recommend it strongly.

I've had two or three bread makers over the years and I think they're all pretty much the same. I now just make bread with my good old Kitchenaid mixer and it comes out just fine.
