Q: Do these spring back to one position? (or latched in each position?)

The switches I got don't latch at each position (ie they are momentary switches). They were the 6Pin (ON)/OFF/(ON) models labeled 'MTS-223 6 Terminal 3 Position DPDT'

Q: anyone know the nut size?

The diameter of the nut is 5.2mm / 0.2"， The outer ring size is about 7.85mm/0.3"

Q: Is their a dpdt 6 terminal for mounting on 10mm thick panel

Theses swithches are spst two terminal switches. I am not sure it would mount on a 10mm thick board though, but the are not expensive,
