Q: Is this able to be used as a Plex media server?

Yes, you can go to ADM > App Central > All Apps to find an app called Plex Media Server. From there you can set up the app and have your NAS be used as a Plex Media Server.

Q: Are we able to upgrade the ram on this unit? 512mb isn't a lot at all.

no, 512mb ram is enough for data transfer and processing, this is not meant to be a web server or application server. it has lots of capabilities but is primarily for data storage and access. 512mb is plenty for that purpose. mine uses about 25% most of the time.

Q: Can i use sas drivers in this product? i have 4 6tb sas hard drives and i am looking for an nas to set up with them.

Our NAS currently only supports SATA drives.

Q: No raid config info, other than user reviews/answers. can i configure 3 drives with raid 5, with the 4th being a hot spare?

Yes you can configure 3 drives to be RAID5 with the 4th being a hot spare. You can find steps by going to Asustor's main website and looking under Services > Asustor College > Topic 251. There is step by step instructions there for RAID setup.
