Q: Why does the display only say eeeee?

It means that the controller is not able to read temperature and so cannot control. You will need to connect a thermocouple to inputs 6 (-) and 7 (+). Make sure you set the correct sensor type (see Table 1 in the instructions) that corresponds to the type of thermocouple you are using. The most common types are K, J or T.

Yes, there is an instruction sheet. Not very detailed but includes all the information you would typically need.

No, this is for turning a heating element on and off, not for an electric motor
